White mold cheese

White mold cheeses are characterized by their snow-white surface and soft interior, such as brie and camembert. These are two French cheeses of which we also have Norwegian varieties, for example Ostegården Camembert and Thorbjørnrud Brilliant brie.

A mature white mold cheese should be soft and delicate, preferably with the smell of mushrooms. As the cheese ages, it will get a darker color inside, become more liquid and may eventually also smell a little of ammonia. Normally this disappears when the cheese is tempered. If you want a milder version, simply choose a cheese whose expiry date shows a good shelf life.
