Flavour: Rich cheesy flavour. Slightly acidic when it is young. As the cheese matures, the surface mould adds a sharper character to the flavour.
Description: A cross between white mould cheese and white semi-hard cheese. The cheese has lots of holes and should be cut with a knife. Suitable for cheese boards and on a slice of bread. Super Gold (category winner, semi-hard white mould cheeses) in the World Cheese Awards 2015.
