Matured cream cheese

 

Matured cream cheese is a type of cheese that is often called "chèvre", which simply means goat in French. However, they can also be made from cow's milk. Matured cream cheese has a high water content and a fairly short lifespan - after approx. 6 weeks they are considered mature. The flavor develops during this period from acidic to fruity.

Matured cream cheeses are often small cheeses, and come in many shapes. They mature with milk fungus, white mold or both. In rare cases, they may be putty-ripened, or ripened with a type of mold called Penicillium album.
