Fresh cheese
Fresh cheese is simply cheese that has not been ripened. In this group we find very different types of cheese, both in consistency and area of use. Well-known examples are ricotta, mozzarella, halloumi (in Norwegian: roast cheese/grill cheese), quark, cream cheese, and cottage cheese - or the Norwegian equivalent, skjørost.
The fresh cheeses are made from fresh curd and can be eaten immediately after production. They often have a mild milky taste with hints of salt and acid. Spices, herbs and mushrooms are added to many fresh cheeses, giving them a different flavor profile.
