Flavour: Intense scent of raw milk, mature, algae, acidic notes - complex but pleasant. Creamy and sweetish with nice mouldy tones, freshness and saltiness. Long aftertaste.
Description: The cheese is first matured in a maturing cellar for two months. There, the cheese is turned, moved and tended to every week. The ripening cellar makes Råblå unlike other blue cheeses in the Norwegian cheese landscape; The maturation crust gives it a distinctive character. The cheese is then wrapped and matured at a low temperature to get a rich flavour. Råblå won gold in the World Cheese Awards 2018 and was named cheese of the year in the competition Det Norske Måltid 2018! Gold in the Norwegian Cheese Championship 2021. R
