Milk: Unpasteurised cow's and goat's milk
Maturation time: Medium-matured
Flavour: Mild taste of goat, nuts, slight washed-rind character, acidic, flavourful and complex.
Description: The cheese is made from about 1/3 goat's milk and 2/3 cow's milk. The cheese is made on the farm for 7 weeks in the summer and is transported down to the village in the autumn.
Retailers: It is sold from Christmas until the warehouse is empty, approx. in August. The cheese is only for sale in Trøndelag.
