Flavour: Yme has a fresh taste of lactic acid, balanced with the more complex flavour of the crust.
Description: Cream cheese from fresh, organic, unpasteurised milk. Yme is a soft cheese, matured with a delicate layer of Geotrichum Candidum, a cheese maturation culture naturally found in raw milk. Matured for 10 – 14 days. We call it a fresh cheese, although it has a short maturation period. Each cheese weighs 130 g. We use unpasteurised cow's milk from Leikvoll Økologiske Gard.
