Flavour: Pan is a classic semi-hard washed-rind cheese.
Description: Washed-rind cheese made from fresh, organic, unpasteurised milk, washed with a ripening culture. In the cellar under the cheese factory, we have a cheese cave, where Pan matures under natural conditions. Every other day, the surface of the cheese is treated with our own ripening culture. This culture is developed in the cave, giving the cheese its characteristic flavour, aroma and pink colour. Pan matures for six weeks before it is wrapped in waxed paper to finish maturing.
