Milk: Goat’s milk

Flavour: Mild flavour, soft and spreadable. The cheese can be used for pizza, salads or cakes, such as lemon cake. It is very lean, but still nutritious.

Description: The whey is heated to about 80 degrees Celsius. At this temperature, the whey protein (albumin) is separated out. Albumin is concentrated protein. It is poured into moulds, stored for around 12 hours at room temperature and then stored in the fridge at approx. + 5 degrees.
