Description: 1879 is a semi-hard matured cheese with a red mould culture that gives it a full-bodied, aromatic flavour and a lovely, rustic crust. The cheese matures on wooden planks for at least three months, where it is washed and turned over every day. This cheese only gets better with age. 1879 is great for cheese boards, tapas tables or just as a snack. It also works well grated in dishes such as pizza, pie and gratins.
