Flavour: Absolutely lovely flavour, dry texture, an explosive flavour bomb when you chew it a little, nice mouthfeel. Strong umami flavour, nutty with a nice and long aftertaste that stays in the mouth for a long time.

Description: Holtefjell has its origins from the French Alps, but this one has a harder texture. Matured for at least 12 months. Very hard, can be grated like a parmesan. Fantastic in all dishes that need a flavour enhancer. Inspired by the Tomm, a French Alpine cheese, but much harder. Norway's answer to Parmesan, but with more aromas that come out gradually when you eat it. Used by most high-profile chefs, and one of Arne Brimi's favourites.
