Description: Mjølkeprim is a very local product that is only cooked in Hallingdal and the surrounding area. This is a brown cheese that is cut into thick slices and served with “kaffimat”, sweet foods that you eat with a cup of coffee. Delicious on freshly baked waffles or “lappar” (traditional pancakes)! In the Mjølkeprim, all of the milk is cooked, instead of removing the cheese curds like in typical brown cheese. This makes the cheese quick to cook and gives it a shorter shelf life, but the Mjølkeprim can be frozen. Traditionally, the milkmaids cooked mjølkeprim on the first and last day on the mountain farm in the summer, when they had to quickly process the milk of the day.
