Flavour: Nice balance between acidity and sweetness. Flavourful and firm cheese similar to Manchego. Shorter storage time makes it milder in flavour and slightly softer than the well-matured Gammel Erik.
Description: Handcrafted cheese based on Gouda, inspiration from the Netherlands and France, as well as several years of further development locally, the cheese appears today as a flavour cheese with a good aroma, crystallized and medium matured.
