As far as we know, Thorbjørnrud Ysteri is Norway's only hotel dairy. With that starting point, one might think that we are closer to a gimmick than a productive cheese dairy, but luckily, the reality is different. Thorbjørnrud is also a renowned local food producer, and in the dairy, we produce more than 10 tonnes of cheese a year and perform quite well in awards, both nationally and internationally.
As the only one in the country producing a certain volume, we make cheese from sheep's milk.
In Norway, making cheese from sheep’s milk is relatively new, so we have to go abroad to find knowledge about the cheesemaking. The sheep's milk behaves well in the cheese making pot and makes excellent cheese. The collection so far includes cheddar and blue cheese made from cow’s and sheep’s milk.
