Flavour: Aromatic and flavourful cheese with an acidic scent and slightly floral taste. It is mild and has a fine balance of salt.
Description: An organic cheddar made from our own milk. This is a cheddar made following the classic English tradition of maturing in bandages. After pressing into a shape, the cheese is greased with our own butter and then bandaged with a cotton fabric. The cheese matures for at least 6 months but is also available in well-matured versions up to 3 years on special occasions.
