Ysteri Pultostkoppen was established in 2014 after a few years of training, trial, error and finally a good feeling that this will work. From the start, it was clear that pultost (traditional cheese) was the main product, that it should be handmade as much as possible, and that the soured skimmed milk should be heated on a wood-fired oven. We do not have our own cows, but luckily, we have been able to buy milk from farms at Jevnaker and can collect them while they are milking, which means the milk is as fresh as it gets.

Vi ønsker å by på lokalproduserte varer med gode smaksopplevelser som gir gjenkjennelse, eller lyst til å prøve noe nytt. Og å løfte fram kunnskap om ysting i liten skala og på tradisjonelt vis, med en nærhet til «hvordan mat blir til» et perspektiv som er viktig å ha med seg inn i framtiden.
