Today, globally award-winning white mould cheese is made at the small dairy, which is located in scenic surroundings in Gudbrandsdalen. Thanks to the former dairy manager Odd Stigen, who was inspired on a trip to France in the early 1980s, traditions from both Norway and France are used in the production of our Norwegian white cheeses. On his journey, he tasted a sharp goat\u2019s cheese that had been deep-fried. Maybe there was a way to adapt a milder version of this cheese to Norwegian palates? Many tastings later, a cheese made from cow's and goat's milk from Lesja and Dovre was developed.
