Yme is a soft cheese, matured with a delicate layer of Geotrichum Candidum, a cheese maturation culture naturally found in raw milk. Matured for 10 \u2013 14 days. We call it a fresh cheese, although it has a short maturation period. Each cheese weighs 130 g.
