We have used the old recipe and adapted it to modern palates. The traditional cheese now has a new, proud name: Bl\u00e5 Viking (Blue Viking). It has a mild and round taste of blue mould, and the crust is washed with a white mould culture. The texture of the cheese is different from other blue cheeses on the Norwegian market.
