Knus hvitl\u00f8ksfeddet. Kok opp 2 liter vann. Forvell persillen og spinaten i 30 sekunder. Hell persillen og spinaten i en sikt, og avkj\u00f8l med iskaldt vann. Press ut vannet. Ha hvitl\u00f8ken, persillen og spinaten i en egnet beholder og miks det sammen med en stavmikser. Hell p\u00e5 olivenolje til du har en pur\u00e9.<\/p>\n<p>&nbsp;<\/p>\n<p>Skrell og finhakk sjalottl\u00f8ken. Kok opp 10 dl gr\u00f8nnsakskraft. Finriv 50-100 g modnet hardost. Varm opp en stekepanne til middels varme, og tilsett 2 ss olivenolje. Tilsett sjalottl\u00f8ken og stek den til den blir blank. Tilsett havrerisen, og stek det sammen i 2-3 minutter. Tilsett litt og litt gr\u00f8nnsakskraft. R\u00f8r underveis. Havrerisen skal suge til seg all v\u00e6sken f\u00f8r du heller p\u00e5 mer. Det tar ca 20 minutter til risottoen er ferdig. Smak til med 1-2 ss med eplesidereddik. N\u00e5r havrerisen er myk, men al dente, vend inn pestoen og osten og smak til med salt og pepper.\u00a0<\/p>\n<p>&nbsp;<\/p>\n<p>Topp havrottoen med geitost og ertespirer.
