The cheese curd is bathed in relatively large amounts of IPA beer (1 part beer to 3 parts curd) for an hour before the beer is drained and the cheese curd is pressed into a shape. The cheese crust is washed with beer during the maturation process. The cheese has a very nice aftertaste of IPA with powerful and distinct fruity notes from the hops that is reminiscent of pineapple.
