Description: The cheese is made in late autumn and winter. After the cheese is made, it goes to the ripening cellar. During the first maturation period, the cheeses are washed with brine, which gives them a reddish bacterial coating. This gives the cheese its characteristic flavour. The development of the cheese determines how long it is matured for, and varies depending on the temperature outdoors and thus the temperature of the natural cheese cellar. Rød Kjerringøy is inspired by a study trip to the French Alps. In 2011, the cheese won the award for Cheese of the Year in the competition Det Norske Måltid.
