Himmelspannet cheese from Hemsedal is handmade, locally produced cheese based on milk from cows and goats. The animals graze in idyllic mountain areas and the cheeses are made in our premises in the centre of Hemsedal.

It is a combination of traditional craftsmanship, theory and research that has made Stavanger Ysteri a pioneer in a growing movement of small organic producers.

As far as we know, Thorbjørnrud Ysteri is Norway's only hotel dairy. With that starting point, one might think that we are closer to a gimmick than a productive cheese dairy, but luckily, the reality is different. Thorbjørnrud is also a renowned local food producer, and in the dairy, we produce more than 10 tonnes of cheese a year and perform quite well in awards, both nationally and internationally.
