Gimstad Gård Ysteri

The story of Gimstad Gård Ysteri started back in 1995 when we found the old, dusty milk separator in the attic of the farm’s storehouse. It didn't work, but we took it downstairs and started dusting it off. After a few weeks, all the parts were dismantled, cleaned and greased, and after it was put back together the unbelievable happened; it started working! By chance, when Christmas came, we realised that we were going to produce a few hundred litres of milk above our quota, and we decided to try making butter. Since then, the idea of processing the milk locally on the farm probably came gradually, and in 2013 we built the cheese dairy.
